Banana Bread

- 4 overripe bananas

- 2 eggs

- 1/2 cup of olive oil

- 1/2 cup of almond milk

- 1/2 cup of brown sugar

- 1/2 cup of raw sugar

- 1 tsp vanilla extract

- 1 1/2 cups of plain flour

- 2 tsp baking powder

- pinch of sea salt flakes


- Mash three bananas in a medium sized mixing bowl with a fork

- Add eggs, oil, milk, sugar, vanilla extract and mix until combined

- Sift flour into the mixture

- Add baking powder and salt and mix until combined

- Pour into a small Pyrex dish

- Slice remaining banana in half lengthways and place on top

- Place in a 180 degree oven for one hour or until golden brown on top


As the aromas of your banana bread will start to fill your home, the sliced bananas on top will be caramelised and the loaf will be golden brown. Test with a skewer to ensure there is no raw batter remaining and add a lid to your Pyrex dish for easy storage. You can add various nuts, fruits or chocolate chips to this recipe to compliment your taste. Serve warm with honey or butter, enjoy!
